Healthy Dinner Recipes For Weight Loss With Chicken

For all you chicken and peanuts lovers – this is one easy & quick healthy dinner recipe, that will make you go nuts for this licky-licious weight loss meal.

Name of this meal is Chicken Go Nuts Tamari Salad 🙂

Ingredients
3 tsp tamari (gluten free)
1-2 tsp curry powder (curcumin inside curry has lots of health benefits)
â…“ tsp cumin (grind before use)
1 garlic clove (grated)
2 skinless chicken breast fillets (alternative: turkey meat)
1 tbsp peanut butter (go for a sugar-free version)
1-3 tsp sweet chilli sauce
1-2 tbsp lemon juice
3 Little Gem lettuce hearts, cut into wedges
3-5 Pickled cucumbers
1-2 onion shallot, halved and thinly sliced
1-2 tsp of feta cheese
Method
STEP 1
In a large dish add tamari, then stir in the curry powder, cumin and garlic. Take few moments to mix them all well.

Next take the chicken breasts and slice them in half horizontally to make 4 fillets in total.
Put chicken to the marinade and keep on mixing.

Set aside in the fridge – from 30min up to 1 hour, to allow the flavours to penetrate the chicken.
STEP 2
Take peanut butter and mix it with sweet chilli sauce, lemon juice, and 1 tbsp water.

When ready to cook the chicken, add a little cooking oil into your choice of a large frying pan.

Put chicken in a pan, then cook for 5 mins on a medium heat. During the last minute turn the fillets over, until cooked but still moist.

Turn off the heat and let chicken inside the pan, to rest few minutes.
STEP 3
Put lettuce wedges, pickled cucumbers and shallots onto your plate.
Spoon over the sauce.

Now it’s time to take the chicken and slice it on top of the salad. Spoon over what ever sauce remained.

Add feta cheese on side of the plate.
