Quick and easy recipe to prepare a coconut fish curry with turmeric
METHOD
- Pound the garlic, chili, ginger, and turmeric to a paste in a mortar and pestle.
- Put oil inside a deep fry pan, then heat oil over a medium heat.
- Stir onion for up to 5 minutes or until softened.
- Add chilli paste and stir again for up to 5 minutes, until you can smell the fragrance.
- Next insert spices and curry leaves. Stir for another 2 minutes.
- Add coconut milk plus stock, then bring to a simmer.
- Cook with light stirring, for 10 minutes or until slightly reduced.
- Add your selected fish and cook for up to extra 5 minutes or until just cooked.
- Add seasoning with lime juice and salt.
- Serve fish curry with rice and top it with your choice of leaves like coriander and/or deep-fried curry leaves.
